EN-FAST
Accelerates fish sauce fermentation

EN-FAST is a protease which refer to a group of enzymes whose catalytic function is to hydrolyze (breakdown) proteins into amino acids which are readily absorbed through the intestinal wall of humans and animals.

EN-FAST is a food-grade, kind of endo-peptidase from a high protease-producing, non-GMO Generally Recognized as Safe (GRAS) Bacillus subtilis strain through submerged fermentation. It reacts on protein-based/polypeptide substances and is widely used in food industries.

EN-FAST can serve as a booster for production of fish sauce. It increases the rate of hydrolysis of fish proteins during its first stage of fermentation. Total Nitrogen and Formol Nitrogen are also increased. It improves the flavor and aroma of Philippine fish sauce (patis). Usual starting dosage is 0.1% to 0.25%. Dosage can be optimized in the different material or production process (within a different temperature, pH and processing time).

EN-FAST is a brown, food-grade powder packed in 1 kg foil bag.
