Amylase

Carbohydrates are an abundant class of organic molecules in the living systems. They have wide range of functions: they provide energy; act as storage molecules of energy and; they also serve as cell membrane components and mediate some forms of communication between cells. AM 100 is an α-amylase enzyme prepared using submerged fermentation added to starch-based products to change the internal structure of starch, which will decrease viscosity. It aids in the breakdown of starch to maltose through hydrolysis of the bonds between glucose repeats. AM 100 catalyzes the hydrolysis of internal alpha- 1,4 linked D-glucose units, yielding a mixture of maltose and glucose. AM 100 is equal to starch modifying agent, produced from a high amylase producing non-GMO, Generally Considered as Safe Bacillus subtilis strain. It reacts on carbohydrate-based substances and is specially prepared for food and beverage industries. This product is considered to be Halal-approved, therefore it does not contain any composition which is considered as taboo for Muslims. This product can also be added to food consumed by vegetarians.

AM 100 is a white to yellow food-grade powder with mesh size of 212 microns packed in 1 kg foil bag. Alternative packaging is available upon request for larger volumes

AM 100 provides optimum results up to 60-70°C, between pH 5.2-6.2. Effective temperature is 35 – 90 while effective pH range is 4.5 – 8. Dosage may vary depending on the different material and production process.

AM100 has an average shelf life of one year from the time of manufacture, so proper storage is a must: store in a cool, dry place and away from direct sunlight. This product maintains its activity for considerably longer time when stored at lower temperatures (below 25°C). The product should not be frozen.
