Glucoamylase

Glucoamylase belongs to the family of amylases which cleaves single glucose units from a non-reducing ends of amylose and amylopectin, in a stepwise manner. Most glucoamylases are able to hydrolyze the 1,6-α linkages in branch points of amylopectin, but a slower rate than the 1,4- α linkages. It is widely used in the industry for the modification of starch and fermentation of alcoholic beverage. EN-GLA 100 is a non-GMO, glucoamylase product produced from Generally Considered as Safe, Rhizopus strain. It reacts on starch-based materials, and is specifically prepared for food and beverage applications.

EN-GLA100 is a white to yellowish food-grade powder packed in 1 kg foil bag. Other packaging requirement is available upon request.

EN GLA-100 provides activity between 40-65°C, at pH 4.0-5.5. Optimum activity is achieved at 55-60°C, at pH 4

GLA100 has an average shelf life of one year from the time of manufacture, so proper storage is a must: store in a cool, dry place and away from direct sunlight. This product maintains its activity for considerably longer time when stored at lower temperatures (below 25°C). The product should not be frozen.
