Cellulase

Cellulose is a long chain of linked sugar molecules which is mainly the component of plant cell walls and is the most abundant in naturally occurring organic compounds. Cellulose provides framework, rigidity and structure for plant cells making it stable under stressful conditions. The links in cellulose are a type of sugar: β-D- glucose. This polymer is nondigestible by humans but is a food for herbivorous animals because they retain it long enough for digestion by microorganisms present in the digestive tract. Cellulase is a class of enzyme which hydrolyses 1, 4 β-D- glucosidic linkages in celluloses, licherin and β-D glucans to release cellobiose and free glucose through successive action.

CE 100 is a beige to light tan cellulase powder with a mesh size of 212 microns packed in 1 kg foil bag. It is produced from a high cellulase-producing non-GMO, Generally Considered as Safe Rhizopus sp. It reacts on cellulose-based/containing substances that is specially prepared for food and beverage industries. This product can also be added to food consumed by vegetarians

CE 100 provides optimum results up from 55-60°C, between pH 4.5 - 5.0. Effective working conditions is at 30-75°C and pH of 4.3-6.0. Working dosage is at 0.05- 0.5%. Dosage may be increased depending on the desired outcome and purpose of application.
